Easy Yummy Granola Bars


Ingredients

2 cups rolled oats

3/4 cup packed brown sugar

1/2 cup wheat germ

3/4 teaspoon ground cinnamon

1 cup all-purpose flour

3/4 teaspoon salt

1/2 cup honey

1 egg, beaten

6 oz apple sauce

2 teaspoons vanilla extract

Directions

Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, and salt. Add honey, egg, apple sauce and vanilla. Mix well! Pat the mixture evenly into the prepared pan. Bake for 20 to 25 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. 


Frozen yogurt bites. I used a medicine dropper to make bite sized circles & squeezed on to a Tupperware lid then placed in the freezer. I used a Tupperware lid because it would be easy to bend and release the little dots with out breaking them.

What’s for lunch?

 

Lets face it, trying to come up with new ideas to feed a kid can be difficult. What the Hell, who am I kidding I could live off of cereal and Mac & Cheese for the rest of my life but Ethan, he’s got a very eclectic palette so it’s fun for me to make up new recipes to see what he will eat. So far he hates broccoli.  Yesterday, I made a pot of Cheese Pea soup and I must say it’s actually pretty tasty.

I used:

  • 1 Can of Campbell’s cheddar soup
  • A bunch (maybe a cup) of frozen peas.
  • A generous pour (maybe a cup again) of Barilla Pastina pasta. Which is shaped like miniature stars super cute!

Cook the pasta in water & strain. Add that into the soup mixed with a can of milk and defrosted peas and it’s done.

Easy PEAsy… The kid loved it and I froze the extra for those days when I’m feeling less creative in the kitchen.

Oh yeah I forgot, good luck cleaning up the little stars that get everywhere…
